Lettuce Tacos this is a raw food recipe
This is the tastiest healthy food I've ever had. You pay for it in the time it takes to prepare.
Here goes:
The tacos are made up of four ingredients - sunflower pate, guacamole, salsa and almond creme. It is sort of a lengthy process making all four components individually, then rolling them up (I used Napa cabbage; you could also use Savoy cabbage, Romaine, or any leafy green you choose). As a short cut, you could skip the almond creme, and you could simply stir chopped avocados into the salsa instead of making separate guacamole.
Sunflower Pate:[/u]
2 c raw sunflower seeds, soaked 4 hours in water and drained and rinsed thoroughly
1 c sun-dried tomatoes, soaked 4 hours in water and drained
1 Tbsp. red miso
1 tsp. sea salt
2 Tbsp. Mexican Seasoning (you can use a pre-made blend, or you can combine 2 parts chili powder and 1 part each of: granulated garlic, granulated onion, cayenne, and cumin)
*** mix all of this in a food processor, adding water to achieve a spreadable consistency like hummus***
Salsa:[/u]
4 tomatoes, chopped
juice of 1 lemon
handful of cilantro (about 2 tbsp when chopped)
1 tsp. sea salt
1 tsp. granulated garlic
Combine.

2 avocados, mashed
juice of 1 lemon
1/2 tsp. salt
1/2 tsp. granulated garlic

*** after mixing, fold some of the salsa into the guacamole***

1 Tbsp. lemon juice
1/2 tsp. each of cumin, sea salt, black pepper, and granulated garlic
***blend in a blender, adding water to desired consistency. optional: stir in some chopped chives***

This is such a great forum!! One way I try to start the day healthy is to eat a bowl of whole grain cereal (there are many flavors out there that taste great) and add a handful of berries (usually blueberries or strawberries). This way you've already got one of your veggies in for the day!!


Lately I've been stir-frying onions & garlic with whatever veggies we have plus balsamic vinegar and/or soy sauce. Be aware of how much oil you use to stir-fry (even if it's olive oil!) b/c that's where the calories hide.
